Electric vacuum enricher
The electric vacuum enricher is a machine that allows you to
evaporate the water from products such as must and juices at a low temperature
of fruit for which it is very important to avoid too high temperatures.
The evaporation of the water allows not only to raise the content
sugar content of the product, but also the concentration of the extracts
significantly increasing the quality of future wine.
The equipment consists of a built-in unit
completely in AISI 304 formed by the following parts:
Supporting frame
A sturdy square section tubular structure with support feet
constitutes the frame on which the enricher is installed.
Evaporation unit
The body of the device consists of a cylinder with a rounded bottom and roof
within which the evaporation and concentration of the must takes place.
The preheated must enters the appliance through a diffuser
rain of special conception that allows a homogeneous distribution
of the must and consequently a better evaporation of the water.
A capacitor is placed in the upper part of the equipment
spiral multitubular where water vapor is condensed and collected.
To improve cold starts, on the bottom outside the equipment,
an electrical resistance with a heating band has been installed.
The evaporation chamber is completed by:
- Level switch, with maximum and minimum alarms.
- Internal washing device.
- Sight glass and illuminated sight glass for internal inspection.
- Upper access cover and lateral inspection cover.
Refrigeration cycle
It has the dual function of condensing water vapor and producing heat
necessary to ensure evaporation. The system includes a compressor
hermetic, a finned exchanger, a coaxial spiral condenser
built in AISI 316 and the spiral multitubular condenser.
The circuit components also include:
- Thermostatic valve
- Filter drier
- Visual spy
- Maximum and minimum pressure gauges and pressure switches
- Capacity regulator
Vacuum system
The vacuum inside the evaporation apparatus and the extraction of the steam
distillate are carried out by a special ejector coupled to a pump
for liquid ring vacuum specially designed to achieve
of the high vacuum.
To perform this function the ejector needs a motive fluid
which in our case consists of chilled water.
An air-cooled mini “chiller” with immersed coil evaporator
in the water collection basin it provides for continuous cooling
of the water itself.
The aspirated distillate from the evaporator is conveyed into the basin
of accumulation mentioned above and can be recovered from an overflow attack afterwards
the filling of the same.
Must replacement circuit
It consists of a low speed centrifugal electric pump, suitable for operation
vacuum, and the relative pipes and valves in AISI 304.
The must, before being sent inside the evaporator, is done
pass through the coaxial coaxial condenser.
Here it acquires the heat necessary for evaporation.
Electrical cabinet
The electric command and control panel, easy to use and with
display of working parameters and alarms, it is installed on a PVC casing
performed according to current regulations.
The start-up and operation phases are completely managed in
automatic by means of a PLC which, also acquiring the signals from
any alarms, also allows the system to be used safely
in the absence of the operator.
